"Don't get stuck in the hopper" - dealing with caking and clumping

Do you work with powdered ingredients? If so, you've probably experienced caking and clumping. Clumping happens when an ingredient gets too moist, and water activity is a great way to predict whether or not it will occur. In fact, each ingredient has a specific water activity at which it begins to agglomerate.
